Andes Mint Cookies



  • 3/4 C. butter or oleo
  • 2 T. water
  • 1 1/2 C brown sugar
  • 1 bag chocolate chips
  • 2 eggs
  • 2 1/2 C flour
  • 1 1/4 tsp soda
  • dash salt
  • Andes Mints






Melt first three ingredients, then take off heat. Add chocolate chips to hot mixture. Stir to mix in and melt. Cool a bit and add eggs, one at a time. mix in flour, soda, and salt. Beat until smooth. Chill for 1 hour. Roll into small balls and bake at 350* for 10-12 minutes. When just about done, add an unwrapped Andes mint to the top of each cookie and bake for about 2-5 more minutes. Take out of the oven and smear the melted mint over the top of the cookie. It takes about 3 small boxes of mints to do this batch of cookies.
